This delicious avocado cheesecake is the perfect sweet addition to any celebration. It combines the creaminess of avocado with refreshing flavors, making it uniquely tasty.

Serving Size: 8-10 servings

Ingredients:

- 2 ripe avocados
- 200 g cream cheese
- 100 g sugar
- 1 dl heavy cream
- Juice of 1 lime
- 1 tsp vanilla sugar
- 150 g digestive biscuits
- 75 g butter
- Fresh berries for garnish (e.g., strawberries or raspberries)

Instructions:

1. Crush the digestive biscuits into fine crumbs and mix them with melted butter.
2. Press the biscuit mixture evenly into the bottom of a cake pan and refrigerate to set.
3. Meanwhile, puree the avocados and mix with cream cheese, sugar, lime juice, and vanilla sugar until smooth.
4. Whip the cream and gently fold it into the avocado mixture.
5. Pour the avocado filling over the biscuit base and smooth the top.
6. Allow the cheesecake to chill in the refrigerator for at least 2 hours before serving.
7. Garnish with fresh berries before serving.
