Instructions:
1. Start by toasting the whole-grain bread slices until golden brown.
2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
3. Mash the avocado with a fork, then add lemon juice, salt, and pepper to taste. Mix until well combined.
4. Bring a small pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes, or until the whites are set and yolks are still runny.
5. Spread the mashed avocado evenly over the toasted bread slices.
6. Using a slotted spoon, carefully remove the poached eggs from the water and place one on top of each avocado toast.
