Ingredients:
- 1 ripe avocado
- 1 slice of whole grain bread
- 1 egg
- Salt, to taste
- Pepper, to taste
- Red pepper flakes (optional)
- Lemon juice (optional)
Instructions:
1. Begin by toasting the slice of whole grain bread until golden brown.
2. While the bread is toasting, bring a small pot of water to a gentle simmer.
3. Crack the egg into a small bowl. Create a gentle whirlpool in the simmering water and carefully slide the egg into the center. Poach for about 3-4 minutes, until the white is set but the yolk is still runny.
4. While the egg is poaching, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt, pepper, and a squeeze of lemon juice, if desired.
5. Spread the mashed avocado evenly over the toasted bread.
6. Once the egg is done, lift it out of the water with a slotted spoon and let it drain for a moment. Place the poached egg on top of the avocado toast.
7. Sprinkle with additional salt, pepper, and red pepper flakes if desired.
8. Serve immediately and enjoy!
