Instructions:
1. Toast the slices of whole-grain bread until golden brown. 2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.
3. Mash the avocado with a fork and mix in the lemon juice, salt, and pepper to taste.
4. In a small pot, bring water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes or until the whites are set and yolks are still runny.
5. Spread the mashed avocado evenly over the toasted bread.
