Ingredients:
- 1 cup quinoa - 4 cups water
- 1 red bell pepper, diced
- 1 zucchini, grated
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 eggs
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil (for frying)
Instructions:
1. Rinse quinoa under cold water and cook it in a pot with water for about 15 minutes until soft. Drain and let cool. 2. Heat 1 tablespoon of olive oil in a frying pan and add onion, garlic, and bell pepper. Sauté for about 5 minutes until vegetables are soft.
3. In a bowl, combine cooked quinoa, grated zucchini, sautéed vegetables, eggs, breadcrumbs, salt, black pepper, and paprika. Mix well.
4. Shape the mixture into patties and fry them in the remaining olive oil over medium heat for about 4-5 minutes on each side until golden brown.
5. Serve warm, for example, with a salad or yogurt sauce.
