A delicious soup made with fresh new potatoes, offering a tasty and nourishing option for summer days.

Ingredients:

- 500 g new potatoes
- 1 onion
- 2 garlic cloves
- 1 l vegetable broth
- 2 dl cream
- Salt and pepper to taste
- Fresh dill for garnish
- 2 tbsp butter

Instructions:

1. Peel and chop the onion and garlic.
2. Peel the new potatoes and cut them into small pieces.
3. Heat the butter in a pot and sauté the onion and garlic until soft.
4. Add the potatoes to the pot and stir for a moment.
5. Pour the vegetable broth into the pot and cook until the potatoes are tender, about 15 minutes.
6. Blend the soup with an immersion blender or in a regular blender until smooth.
7. Stir in the cream and season with salt and pepper. Reheat the soup without boiling.
8. Serve the soup garnished with fresh dill.
