A delicious and nourishing vegetable soup inspired by the Yhteinen Pöytä model, bringing together fresh seasonal vegetables. This dish is a perfect warm meal and a great way to utilize leftover vegetables. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 100 ml cream (or plant-based cream)
- Fresh parsley, for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing for about 5 minutes until softened.
2. Add the carrots, potatoes, zucchini, and bell pepper. Cook for a few minutes, stirring occasionally.
3. Pour in the vegetable broth and add thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer on low for about 15-20 minutes until the vegetables are tender.
4. Blend the soup with an immersion blender or in a blender to your desired consistency.
5. Stir in the cream and mix well. Heat the soup again without bringing it to a boil.
6. Serve the soup garnished with fresh parsley.
