This delightful chicken salad is the perfect combination of flavor and nutrients. Although the recipe requires a bit of effort, the result is worth it! Preparation Time: 45 minutes

Ingredients:
- 400 g chicken breast fillets - 1 dl olive oil
- 2 tbsp lemon juice
- 1 tsp salt
- 1/2 tsp black pepper
- 150 g mixed salad greens
- 1 cucumber
- 1 red bell pepper
- 100 g feta cheese
- 1 dl sunflower seeds
- 1 avocado
Instructions:
1. Boil the chicken breast fillets in salted water for about 20 minutes until cooked. Allow to cool and shred into strips. 2. Prepare the marinade by mixing olive oil, lemon juice, salt, and black pepper. Add the shredded chicken to the marinade and let it marinate for about 15 minutes.
3. Rinse and dry the salad greens. Slice the cucumber and bell pepper into strips.
4. In a bowl, combine the salad greens, cucumber, bell pepper, and avocado. Add the marinated chicken.
5. Crumble the feta cheese over the salad and sprinkle with sunflower seeds.
6. Serve immediately and enjoy with a New Zealand or Australian Sauvignon Blanc white wine.
