These vegetable patties are tasty and nutritious, making them perfect for lunch or dinner.

Ingredients:
- 2 cups cooked chickpeas (canned or boiled)
- 1 cup rolled oats
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 small carrot, grated
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil for frying
Instructions:
1. Rinse the chickpeas well and drain them.
2. Mash the chickpeas with a fork or in a blender until they are mostly smooth.
3. Add the oats, onion, garlic, carrot, bell pepper, cumin, salt, black pepper, and parsley to the mixture. Mix well.
4. Shape the mixture into patties.
5. Heat the olive oil in a frying pan over medium heat.
6. Fry the patties for about 4-5 minutes on each side, until they are golden brown.
7. Serve warm with salad or dipping sauce.
