Antillean Pork Stew

A delicious and hearty dish that brings tropical flavors to your home, perfect for dinner and pairs wonderfully with rice or fresh bread. Preparation Time: 2 hours
Serving Size: 4 servings
Ingredients:
- 1 boneless pork shoulder
- 3 onions
- 6 bird's eye peppers
- 6 cloves of garlic
- 500 g zucchini
- 500 g eggplant
- 2 large tomatoes
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and pepper to taste
- 2 dl chicken broth
Instructions:
1. Cut the pork shoulder into cubes and season with salt and pepper.
2. Heat the olive oil in a large pan and brown the pork pieces on all sides. Remove the meat and set aside.
3. Chop the onions, garlic, bird's eye peppers, zucchini, eggplant, and tomatoes.
4. Add the onions to the pan and sauté for about 5 minutes.
5. Add the garlic and bird's eye peppers, continuing to sauté for another 3 minutes.
6. Return the browned pork to the pan, adding the zucchini, eggplant, and tomatoes. Mix well.
7. Pour in the chicken broth, add thyme and rosemary. Allow the stew to simmer on low heat for about 1.5 hours until the meat is tender.
8. Taste and adjust seasoning with additional salt and pepper if needed.
9. Serve hot with rice or bread.
