This delicious Vinho Verde Chicken features tender chicken breast, sautéed spinach, and tangy feta cheese, all complemented by the fresh flavors of lemon and garlic. Perfect for a light yet satisfying meal.
Ingredients:
- 500 g chicken breast fillets
- 2 tablespoons olive oil
- 2 garlic cloves, crushed
- 1 lemon, juice and zest
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 200 g cherry tomatoes, halved
- 100 g fresh spinach leaves
- 150 g feta cheese, crumbled
- Fresh basil leaves for garnish
Instructions:
1. Heat olive oil in a skillet over medium heat. Add crushed garlic and sauté for a moment until fragrant.
2. Add chicken breast fillets to the skillet and cook both sides until golden brown, about 5-7 minutes per side.
3. Season the fillets with lemon juice, lemon zest, salt, black pepper, and paprika. Mix well.
4. Add cherry tomatoes to the skillet and cook for an additional 3-4 minutes, until the tomatoes soften.
5. Stir in the spinach leaves and cook until just wilted.
6. Remove the skillet from heat and sprinkle crumbled feta cheese on top.
7. Serve garnished with fresh basil leaves and enjoy with a glass of Adega Pegoes Colheita Seleccionada 2014 wine.
