Caldo Verde - Kale Soup

A delicious and nutritious pureed soup made from kale, perfect for a light meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 200 g kale- 1 large potato
- 1 onion
- 2 garlic cloves
- 1 l vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
- ½ tsp paprika (optional)
Instructions:
1. Peel and chop the potato, onion, and garlic.2. Heat the olive oil in a pot and sauté the onion and garlic until soft.
3. Add the chopped potato to the pot and pour in the vegetable broth.
4. Cook until the potatoes are tender, about 15 minutes.
5. Stir in the chopped kale and cook for an additional 5-7 minutes, until the kale is tender.
6. Blend the soup until smooth using an immersion blender or a regular blender.
7. Season with salt, pepper, and paprika (if using).
8. Serve warm.
