Caldo Verde - Traditional Portuguese Kale Soup

A delicious and nourishing Portuguese soup perfect for warming up on a cold winter day. Preparation Time: 40 minutes
Serving Size: 4-6
Ingredients:
- 2 large onions
- 2 garlic cloves
- 3 medium potatoes
- 1.5 liters of water
- 2 bay leaves
- 1 teaspoon salt (or to taste)
- Freshly ground black pepper
- 300 g green kale (e.g., kale or savoy cabbage)
- Bread for serving
- Piri-piri oil for serving (optional)
Instructions:
1. Sauté chopped onions in oil in a large pot. Add crushed garlic and diced potatoes, and heat for a moment while stirring.
2. Pour in over a liter of water, add bay leaves and salt, and sprinkle with black pepper. Simmer the soup with the lid on until the potatoes are tender.
3. In another pot, bring a liter of water to a boil and season with salt. Remove the tough stem from the kale, roll the leaves tightly, and slice them into thin strips. Cook the kale for about 10 minutes.
4. Take a ladle of potatoes from the soup pot, remove the bay leaves, and blend the soup until smooth. Stir in the cooked kale and a bit of the kale cooking water. Simmer for 5 minutes and add the whole potato cubes back in.
5. If desired, add sautéed sausage slices to the soup. Serve warm with bread and piri-piri oil on the side.
