Pozole Verde - Mexican Green Chicken Soup

A delicious and spicy chicken soup that combines flavor and freshness, served with shredded chicken and amazing toppings. Preparation Time: 1 hour
Serving Size: 4-6 servings
Ingredients:
- 500 g chicken breast
- 1 liter chicken or vegetable broth
- 1 medium onion, chopped
- 2 garlic cloves, crushed
- 2-3 green chilies (e.g., jalapeño), chopped
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 200 g fresh cilantro, chopped
- 1 lime, juiced
- Tortillas for serving
Toppings:
- Sliced avocado
- Shredded cabbage
- Sliced fresh radishes
- Sour cream or crema
Instructions:
1. Boil the chicken breasts in the chicken or vegetable broth for about 20-25 minutes until cooked. Remove the chicken from the pot and shred it into strips.
2. Pour the broth back into the pot and add the chopped onion, crushed garlic, chopped chilies, cumin, salt, black pepper, and oregano. Let it simmer on low heat for about 10 minutes.
3. Add the shredded chicken back into the broth and mix in the chopped cilantro and lime juice. Allow the soup to simmer for another 5-10 minutes.
4. Serve the soup hot with tortillas and your choice of toppings.
