Prep Time: 45 minutes (including marinating)

Ingredients:
- 500 g pork tenderloin
- 1 zucchini
- 200 g fresh mushrooms
- 3 spring onions
Marinade:
- 1 dl hot water
- 4 dl canned coconut milk
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Cut the pork tenderloin into strips.
2. Prepare the marinade by mixing hot water, coconut milk, lemon juice, salt, and pepper in a bowl.
3. Add the pork strips to the marinade and let them marinate in the refrigerator for at least 30 minutes.
4. Slice the zucchini and mushrooms.
5. Take the pork strips out of the marinade and alternate them on skewers with zucchini, mushrooms, and spring onions.
6. Grill the skewers over medium heat for about 10-15 minutes, until the meat is cooked through and has a nice color.
7. Serve hot with rice or salad.
