Delicious and fluffy pancakes infused with pumpkin puree and warm spices, perfect for breakfast! Preparation time: 15 minutes
Serving size: 4 servings
Ingredients:
- 2 dl gluten-free flour blend
- 1 dl pumpkin puree
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 eggs
- 2 dl milk
- 2 tbsp melted butter
- 1/2 dl chocolate chips (optional)
Instructions:
1. In a bowl, mix together the dry ingredients: flour blend, sugar, baking powder, salt, and cinnamon.
2. Add the pumpkin puree, eggs, milk, and melted butter. Stir until you have a smooth batter.
3. If desired, fold in the chocolate chips into the batter.
4. Heat a frying pan over medium heat and add a little butter or oil to the pan.
5. Pour batter onto the pan in your desired pancake size.
6. Cook the pancakes for about 2-3 minutes on each side, until they are golden brown.
7. Serve the pancakes warm with maple syrup or fresh berries. Enjoy!
