Delicious and fluffy pancakes made with pumpkin puree, perfect for breakfast or brunch. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 2 dl pumpkin puree
- 2 dl milk
- 2 eggs
- 2 dl all-purpose flour
- 1 dl sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- Butter for frying
Instructions:
1. In a bowl, mix together the pumpkin puree, milk, and eggs until well combined.
2. In another bowl, combine the all-purpose flour, sugar, baking powder, cinnamon, nutmeg, and salt. Mix thoroughly.
3. Gradually add the dry ingredients to the wet mixture, stirring until a smooth batter forms.
4. Heat a frying pan over medium heat and add a little butter.
5. Pour the batter onto the pan in your desired pancake size.
6. Cook the pancakes on both sides until they are golden brown.
7. Serve warm with maple syrup or honey.
