Pumpkin Bread (Kurpitsakakku)

A delicious and moist pumpkin bread perfect for any occasion.
Preparation Time: 15 minutes
Cooking Time: 45-55 minutes
Serving Size: 10 slices
Ingredients:
- 1 ½ tbsp chia seeds (+ 4 tbsp water)
- ½ dl melted coconut oil
- ½ dl coconut or maple syrup
- 150 g pumpkin puree
- 1 small banana
- 2 dl coconut sugar
- 1 ¼ dl water
- ½ tsp salt
- ½ tsp cinnamon
- ¼ tsp cloves
- ½ tsp cardamom
- 2 tsp baking soda
- 2 ½ dl gluten-free rolled oats
- 1 dl almond flour
- 3 dl light gluten-free flour blend
- Coconut oil and almond flour for greasing the pan
Instructions:
1. Mix chia seeds and water, and let the mixture gel for about 10 minutes.
2. In another bowl, combine melted coconut oil, syrup, pumpkin puree, mashed banana, coconut sugar, and water.
3. In a separate bowl, mix the dry ingredients: salt, spices, baking soda, rolled oats, almond flour, and flour blend.
4. Quickly combine the wet and dry ingredients.
5. Grease a loaf pan with coconut oil and dust with almond flour.
6. Pour the batter into the pan and bake at 175°C (350°F) for about 45-55 minutes or until the bread is cooked through.
7. Allow to cool before serving. Enjoy with glögg or your favorite treats!
