A delicious and nutritious energy bar perfect for a snack or on-the-go meal. Preparation Time: 25 minutes
Serving Size: 12 bars
Ingredients:
- 2 dl rolled oats
- 1 dl nuts (e.g., almonds or walnuts)
- 1 dl dried fruits (e.g., raisins or apricots)
- 2 tbsp honey or maple syrup
- 1/2 dl peanut butter or almond butter
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 dl chocolate chips (optional)
Instructions:
1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
2. In a large bowl, mix together the rolled oats, nuts, dried fruits, and salt.
3. In a microwave-safe bowl, warm the honey and peanut butter for about 30 seconds until soft, then stir in the vanilla extract.
4. Pour the honey-peanut butter mixture into the dry ingredients and mix well until everything is evenly coated.
5. If using, add the chocolate chips and stir to combine.
6. Press the mixture evenly into the lined baking tray to form a flat layer.
7. Bake in the oven for about 15-20 minutes, or until the edges are slightly golden brown.
8. Allow to cool completely before cutting into bars.
9. Store the bars in an airtight container.
