Lime-Infused Energy Bars

Refreshing and energy-packed bars, perfect as a post-workout treat. Easy to make and customizable to your taste. Preparation Time: 30 minutes
Serving Size: 10 bars
Ingredients:
- 15-20 Medjool dates - 2 cups puffed brown rice (sugar-free)
- 3½ cups unsweetened shredded coconut
- ½ cup sprouted buckwheat
- A pinch of salt
- Zest and juice of 2 limes
Instructions:
1. If the dates are dry, soak them in a small amount of water. Soft dates do not require processing. 2. Blend all ingredients (except for the puffed rice) into a smooth mixture.
3. Gently fold in the puffed rice by hand until well combined.
4. Shape the mixture into a bar mold or form by hand into bars.
5. Place the mold in the freezer until the bars are firm.
6. Remove the bars from the mold and dehydrate them in a dehydrator or in the oven at a low temperature for a few hours.
