Zucchini Soup

A delicious and lightly seasoned soup that warms the heart and body on rainy summer days.
Preparation Time: 30 minutes
Servings: 4 servings

Ingredients:

- 2 medium zucchinis
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 1 dl cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish

Instructions:

1. Peel and chop the onion and garlic.
2. Heat olive oil in a pot and sauté the onion and garlic until they are soft.
3. Rinse and chop the zucchinis. Add them to the pot and sauté for a few minutes.
4. Pour the vegetable broth into the pot and let the soup simmer for about 15 minutes, until the zucchinis are tender.
5. Blend the soup with an immersion blender or in a blender until smooth.
6. Stir in the cream and mix well. Season with salt and pepper.
7. Heat the soup again, but do not boil.
8. Serve warm, garnished with fresh basil.
