A delicious recipe combining lime-cured salmon and caviar mousse, perfect for serving with gluten-free crackers.

Serving Size: 4 servings

Ingredients:

- 400 g salmon fillet
- Juice of 2 limes
- 2 tbsp sugar
- 1 tbsp salt
- 1 tbsp crushed pink peppercorns
- 1/2 dl fresh cilantro (chopped)
- 200 g sour cream
- 100 g caviar (such as trout or salmon roe)
- Black pepper to taste
- Gluten-free crackers for serving

Instructions:

1. Prepare the cured salmon: In a bowl, mix lime juice, sugar, salt, and pink peppercorns.
2. Pour the mixture over the salmon fillet and rub it in well. Cover and let marinate in the refrigerator for at least 4 hours or overnight.
3. Make the caviar mousse: In a bowl, combine sour cream, caviar, and chopped cilantro. Season with black pepper.
4. Slice the marinated salmon into thin pieces.
5. Serve the salmon slices on top of the caviar mousse on gluten-free crackers.
