Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 400 g chicken fillets
- 2 tablespoons olive oil
- 1 onion
- 2 garlic cloves
- 1 bell pepper
- 200 g cherry tomatoes
- 100 ml cream
- Salt and pepper to taste
- Fresh basil (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little pasta water. 2. Cut the chicken fillets into bite-sized pieces. Chop the onion, garlic, and bell pepper.
3. Heat the olive oil in a pan over medium heat. Add the chicken pieces and cook until they are done. Season with salt and pepper.
4. Add the onion, garlic, and bell pepper to the pan. Sauté until the vegetables are soft.
5. Add the cherry tomatoes and cream to the pan. Simmer for a few minutes until the tomatoes are softened.
6. Mix the cooked pasta into the sauce. Add reserved pasta water as needed to achieve desired consistency.
7. Serve with fresh basil on top.
