Description: This recipe transports you to the flavors of the Lime Lounge restaurant in Pärnu. A simple and delicious lunch perfect for enjoying with friends.

Ingredients:

- 200 g fresh salmon
- 100 g avocado
- 50 g fresh salad (e.g., arugula or iceberg lettuce)
- 1 dl quinoa
- Juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 dl fresh cilantro (optional)

Instructions:

1. Cook the quinoa according to the package instructions. Drain and let it cool.
2. Sear the salmon in a pan over medium heat for about 4-5 minutes on each side until cooked through. Season with salt and pepper.
3. Slice the avocado into pieces.
4. In a bowl, mix the cooled quinoa, lime juice, olive oil, and chopped cilantro if desired.
5. Plate the salad, adding the quinoa mixture, a piece of salmon, and avocado on top.
6. Serve immediately and enjoy!
