Ingredients:
- 4 tortillas
- 300 g chicken breast
- 1 bell pepper (red or green)
- 1 small onion
- 1 dl corn (canned or frozen)
- 1 dl shredded cheese (e.g., cheddar)
- 2 tbsp oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp chili powder
- Fresh cilantro (optional)
Instructions:
1. Peel and chop the onion and bell pepper.
2. Heat the oil in a pan over medium heat. Add the onion and bell pepper, sautéing for about 5 minutes.
3. Add the diced chicken breast and spices (salt, black pepper, paprika, chili powder). Cook until the chicken is fully cooked, about 10-15 minutes.
4. Stir in the corn and mix well. Allow to cook for a few more minutes.
5. Warm the tortillas separately in a pan or microwave.
6. Fill the tortillas with the chicken mixture and sprinkle shredded cheese and fresh cilantro on top.
7. Serve immediately while warm.
