A comforting Finnish fish soup made with potatoes, carrots, and fresh fish.
Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 6 large potatoes
- 2-3 carrots
- 1 onion or a piece of leek
- 5-10 allspice berries
- 2-3 fish stock cubes
- 1 bay leaf
- Water
- 1 packet of fish (e.g., salmon or pike)
- Salt and pepper to taste
- Fresh dill for garnish (optional)
Instructions:
1. Peel and dice the potatoes and carrots into cubes.
2. Chop the onion or leek finely.
3. In a pot, add enough water to cover the vegetables. Add the potatoes, carrots, onion/leek, allspice berries, fish stock cubes, and bay leaf.
4. Boil the vegetables for about 15-20 minutes, until tender.
5. Add the diced fish to the pot and cook for another 10 minutes, until the fish is cooked through.
6. Season with salt and pepper to taste.
7. Serve the hot soup garnished with fresh dill if desired.
