Ingredients:
- 500 g fish (such as pike or salmon)
- 1 liter fish stock
- 2 potatoes
- 1 carrot
- 1 onion
- 200 ml cream
- 2 tbsp butter
- 100 ml dill (fresh or dried)
- Salt and pepper to taste
- Lemon juice (optional)
Instructions:
1. Peel and chop the potatoes and carrot.
2. Finely chop the onion.
3. Heat the butter in a large pot and sauté the onion for a few minutes.
4. Add the fish stock to the pot and bring to a boil.
5. Add the potatoes and carrots to the pot and cook for about 10 minutes or until the vegetables are tender.
6. Cut the fish into pieces and add it to the soup. Cook for an additional 5-7 minutes, until the fish is cooked through.
7. Stir in the cream, dill, salt, pepper, and lemon juice if desired.
8. Let the soup simmer for a few more minutes before serving.
