Serving Size: 4-6 servings
Ingredients:
- 600 g potatoes - 2 tbsp olive oil
- Salt and pepper to taste
- 1 red onion, chopped
- 100 g cherry tomatoes, halved
- 100 g fresh parsley, chopped
- 2 tbsp balsamic vinegar
- 100 g feta cheese, crumbled
Instructions:
1. Peel and cut the potatoes into evenly sized cubes. 2. Boil the potatoes in salted water for about 10 minutes, until just tender. Drain and let cool slightly.
3. Preheat the oven to 200°C (400°F).
4. Toss the potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast in the oven for about 20-25 minutes, until golden brown and crispy.
5. Meanwhile, sauté the red onion in a pan until softened.
6. Once the potatoes are ready, combine them in a bowl with the sautéed red onion, cherry tomatoes, parsley, and balsamic vinegar.
7. Finally, gently fold in the crumbled feta cheese.
8. Serve warm or at room temperature.
