A delicious recipe that combines Mexican meatballs, guacamole, pickled red onions, and a fresh tomato-onion salad in tortillas. Perfect for casual gatherings!

Ingredients

- Mexican Meatballs:
- 700 g ground beef
- 3 cloves garlic
- 5 cm piece of red chili
- Juice of half a lime
- A handful of fresh cilantro
- 1 egg
- 2 tsp salt
- 1 tsp chili powder
- 1 tbsp cumin seeds
- 1 tbsp Worcestershire sauce
- 100 g crushed nachos
- Guacamole:
- 2 avocados
- 2 cloves garlic
- 5 cm piece of red chili
- 1 tsp salt
- 2 tbsp lemon juice
- Black pepper to taste
- Pickled Red Onions:
- 1 large or 2 small red onions
- 75 ml white wine vinegar
- 2 tbsp balsamic syrup
- 5 tbsp sugar
- A pinch of salt
- A splash of water
- Tomato-Onion Salad:
- 250 g cherry tomatoes
- 1 large or 2 small shallots
- Fresh cilantro
- 5 cm piece of red chili
- 1.5 tsp white wine vinegar
- 1 tbsp olive oil
- A pinch of salt and black pepper
- Additionally:
- Corn or wheat tortillas
- Romaine lettuce
- 1 lime
- Fresh cilantro for garnish

Instructions

1. Prepare the Meatballs: Remove seeds from the chili and finely chop. In a bowl, mix ground beef, chili, and lime juice. Add crushed garlic and chopped cilantro. Incorporate egg, salt, chili powder, cumin, Worcestershire sauce, and crushed nachos. Shape into small meatballs and fry in a skillet until golden brown and cooked through.
2. Make the Guacamole: Remove seeds from the chili, finely chop, and mash the avocados. Add the chili, crushed garlic, salt, lemon juice, and black pepper. Mix well and refrigerate.
3. Pickle the Red Onions: Slice the red onions and combine with the other pickling ingredients. Store in the refrigerator, preferably overnight.
4. Prepare the Tomato-Onion Salad: Halve the cherry tomatoes, chop the shallot and chili. Combine all ingredients in a bowl and season with vinegar, olive oil, salt, and pepper.
5. Assemble the Tortillas: Heat the tortillas in a skillet or microwave. Fill the tortillas with romaine lettuce, meatballs, guacamole, pickled red onions, and tomato-onion salad. Garnish with fresh cilantro and lime wedges.
