Zucchini soup is a delicious and light dish that is perfect as a starter or for a spring dinner. It's quick and easy to prepare!

Ingredients:

- 2 medium zucchinis
- 1 onion
- 2 garlic cloves
- 500 ml vegetable broth
- 200 ml cream (or plant-based cream)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., basil or thyme) for garnish

Instructions:

1. Peel and chop the onion and garlic cloves. Heat the olive oil in a pot and sauté the onion and garlic until soft.
2. Rinse and chop the zucchinis. Add them to the pot and cook for a few minutes.
3. Pour the vegetable broth into the pot and let the soup simmer for about 15 minutes, until the zucchinis are tender.
4. Blend the soup with an immersion blender or in a regular blender until smooth.
5. Stir in the cream and mix well. Season with salt and pepper.
6. Heat the soup again, but do not bring it to a boil.
7. Serve warm, garnished with fresh herbs.
