Serving Size: 4-6 servings
Ingredients:
- 4 dl milk
- 2 dl all-purpose flour
- 2 eggs
- 200 g fresh spinach (or frozen spinach)
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 tbsp oil for frying
Instructions:
1. Rinse the fresh spinach and chop it finely. If using frozen spinach, thaw and drain it.
2. In a bowl, mix the milk, eggs, and salt.
3. Add the flour and baking powder, and mix until you have a smooth batter.
4. Stir the chopped spinach into the batter and mix well.
5. Heat a frying pan over medium heat and add the oil.
6. Pour batter onto the pan and cook until the surface is set and the bottom is golden brown (about 2-3 minutes per side).
7. Repeat until all the batter is used.
8. Serve warm with salad or dip.
