A delicious and nutritious dish made with fresh Swiss chard and herbs, combined with feta cheese to create flavorful fritters. Perfect as an appetizer or a light meal.

Ingredients:

- 200 g Swiss chard leaves (without thick stems)
- 15 g flat-leaf parsley
- 10 g coriander leaves
- 10 g dill
- 0.75 tsp grated nutmeg
- 1.5 tbsp whole wheat flour
- 1 crushed garlic clove
- 1 egg
- 1/4 tsp sugar
- 40-50 g feta cheese (e.g., goat's milk feta)
- 2.5 tbsp olive oil for frying
- Salt and black pepper to taste
- 4 lemon wedges

Instructions:

1. Boil water in a large pot and season it with salt. Add Swiss chard leaves and simmer for 5 minutes. Drain and squeeze the leaves dry.
2. Place the Swiss chard leaves in a food processor along with parsley, coriander, dill, nutmeg, flour, garlic, egg, sugar, salt, and black pepper. Blend until smooth.
3. Crumble the feta into the mixture and gently fold it in, being careful not to break it down too much.
4. Heat 1 tbsp of oil in a medium skillet over medium heat. Take a spoonful of the mixture and place it in the pan. Flatten the fritter slightly to about 1 cm thick.
5. Cook the fritters for about 4 minutes, flipping halfway through, until golden brown on both sides. Transfer the cooked fritters to a plate lined with paper towels.
6. Add more oil to the pan if needed and repeat the frying process with the remaining mixture.
7. Serve the fritters with lemon wedges, squeezing lemon juice over them before enjoying.
