Ingredients:
- 500 g carrots
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh thyme or rosemary (optional)
Instructions:
1. Peel the carrots and cut them into your desired size.
2. Preheat the oven to 200°C (400°F).
3. Place the carrot pieces in a bowl and add olive oil, salt, and black pepper. Mix well to coat all pieces.
4. Spread the carrots on a baking sheet lined with parchment paper.
5. Roast the carrots in the oven for about 25-30 minutes, until they are golden brown and tender. Stir once halfway through.
