A delicious and simple roasted cauliflower recipe that combines local cauliflower with a warm, spiced dukkah mix. Perfect as a side dish or main course enjoyed hot.

Ingredients:

- Cauliflower (chopped)
- Garlic cloves
- Salt and pepper
- Olive oil
- Lemon juice
- Dukkah spice mix

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Chop the cauliflower and rinse it thoroughly.
3. Drizzle a generous amount of olive oil over the cauliflower and squeeze in some lemon juice. Season with salt and pepper, then mix well.
4. Spread the cauliflower evenly on a baking sheet and add garlic cloves for flavor. You can leave the garlic in their skins for roasting.
5. Roast in the oven for about 30–40 minutes until the cauliflower is tender.
6. Squeeze the roasted garlic out of its skins into the cauliflower. Drizzle with a little more olive oil and lemon juice.
7. Generously sprinkle the dukkah spice mix over the vegetables and gently toss to combine.
8. Taste and serve immediately while hot.
