Roasted Tomatillo Salsa

A fresh and spicy salsa perfect for tacos, tortillas, or grilled meat and fish. Preparation time is about 40 minutes, and this recipe yields approximately 1.5 cups (4 dl) of salsa. Ingredients:
- 1 can green tomatillos (790 g)
- 2 green jalapeños
- 2 green chiles
- 4-5 cloves garlic
- 1 onion
- Juice of 2 limes
- Pinch of black pepper
- Pinch of ground cumin
- Pinch of dried oregano
- ½ bunch fresh mint (or cilantro)
- Drizzle of olive oil
- Drizzle of apple cider vinegar
- Salt to taste
Instructions:
1. Place all the vegetables on a baking sheet and roast at 400°F (200°C) for about 20 minutes, or until the surfaces of the vegetables begin to darken. A little charring adds flavor, but avoid burning them.
2. Peel the chiles and jalapeños, removing most of the seeds.
3. Combine all ingredients in a bowl and blend until smooth.
4. Chill the salsa and season cautiously at first. Taste again once it has cooled to check the flavor.
5. Serve the salsa cold alongside tacos, tortillas, or grilled meat and fish.
