Ingredients:
- 400 g large white beans (e.g., gigantes beans) - 1 can diced tomatoes (400 g)
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 100 ml water
- Fresh parsley, chopped (for garnish)
Instructions:
1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and diced bell pepper, sautéing for about 5 minutes until soft. 2. Add the crushed garlic and cook for an additional minute.
3. Stir in the diced tomatoes, beans, oregano, salt, black pepper, and water. Mix well.
4. Allow the mixture to simmer on low heat for about 15-20 minutes until thickened.
5. Serve the bean stew warm, garnished with fresh parsley and accompanied by crusty bread.
