Ingredients:
- 250 g ricotta cheese - 100 g sugar
- 3 eggs
- Juice and zest of 1 lemon
- 150 g all-purpose flour
- 1 tsp baking powder
- 50 g butter, melted
- A pinch of salt
- Powdered sugar, for garnish (optional)
Instructions:
1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan. 2. In a bowl, mix the ricotta cheese and sugar until smooth.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the lemon juice and zest until well combined.
5. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the ricotta mixture and mix gently.
6. Pour the melted butter into the batter and stir until fully incorporated.
7. Pour the batter into the prepared cake pan and smooth the top.
8. Bake in the oven for about 40-45 minutes, or until the cake is golden brown and cooked through. Test for doneness with a toothpick.
9. Allow the cake to cool before serving. Optionally, dust with powdered sugar before serving.
