Baked Salmon with Ricotta Topping

Ingredients:
- 4 salmon fillets
- 250 g ricotta cheese
- Juice of 1 lemon
- 2 tablespoons fresh basil (chopped)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 50 g grated Parmesan cheese (optional)
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Place the salmon fillets on a baking sheet lined with parchment paper.
3. In a bowl, mix together ricotta cheese, lemon juice, basil, olive oil, salt, and pepper.
4. Spread the ricotta mixture evenly over the salmon fillets.
5. (Optional) Sprinkle grated Parmesan cheese on top of the ricotta layer.
6. Bake in the oven for about 15-20 minutes, or until the salmon is cooked through and the topping is nicely colored.
7. Serve warm with vegetables or potatoes.
