Lemon-Flavored Vegan Doughnuts

Delicious vegan doughnuts infused with lemon and soy-based cream cheese, perfect for celebrations. Preparation Time: 1 hour (including rising)
Serving Size: About 20 large doughnuts
Ingredients:
- 250 g soy cream cheese (e.g., Alpro Greek Style)- 2 dl oat milk (or other plant-based milk)
- 1 packet (50 g) yeast
- Zest of 2 lemons
- 1 tablespoon lemon juice
- 1 ½ dl sugar
- 1 teaspoon vanilla sugar
- ½ teaspoon salt
- 8 dl all-purpose flour
- 1 dl oil (e.g., rapeseed oil)
- Oil for frying (rapeseed oil)
Instructions:
1. Warm the oat milk to body temperature and dissolve the yeast in it.2. Add the soy cream cheese, lemon zest, lemon juice, sugar, vanilla sugar, and salt. Mix well.
3. Gradually add the flour and oil until the dough is smooth and soft.
4. Knead the dough for about 5-10 minutes until it is elastic.
5. Cover the dough with a cloth and let it rise in a warm place for about 30 minutes.
6. Once the dough has risen, roll it out to about 1-2 cm thick and cut out your desired shapes (e.g., rings or circles).
7. Let the doughnuts rise again for about 20-30 minutes.
8. Heat oil for frying in a deep pot.
9. Fry the doughnuts until golden brown on both sides. Place them on paper towels to drain excess oil.
10. Serve warm and enjoy!
