These tasty spinach-feta muffins are a perfect snack or light lunch. They are easy to make and taste great fresh or frozen. Preparation Time: 30 minutes
Serving Size: 12 muffins
Ingredients:
- 2.5 cups all-purpose flour
- 1 cup milk
- 0.5 cup oil
- 2 eggs
- 7 oz fresh spinach (chopped)
- 5.3 oz feta cheese (crumbled)
- 1 tsp baking powder
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 cup grated parmesan cheese (optional)
Instructions:
1. Preheat the oven to 350°F (180°C). Grease a muffin pan or use paper muffin liners.
2. In a bowl, mix the flour, baking powder, salt, and black pepper.
3. In another bowl, whisk together the eggs, milk, and oil.
4. Combine the dry ingredients with the wet ingredients and mix well.
5. Fold in the chopped spinach and crumbled feta until evenly incorporated.
6. Divide the batter into the muffin cups, filling each about 2/3 full.
7. If using parmesan cheese, sprinkle it on top of the muffins.
8. Bake in the oven for about 20-25 minutes, or until the muffins are golden brown and cooked through.
9. Let cool for a moment before serving.
