Ingredients:

- 300 g pasta (e.g., spaghetti or fusilli)
- 200 g chicken or tofu, diced
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 ml cream (or plant-based cream)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish

Instructions:

1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little pasta water.
2. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sautéing for about 2-3 minutes.
3. Add the diced chicken or tofu to the pan and cook until done.
4. Stir in the bell pepper and cherry tomatoes, continuing to sauté for a few more minutes until the vegetables soften.
5. Pour the cream into the pan and mix well. If the sauce seems too thick, add a bit of the reserved pasta water.
6. Toss the cooked pasta into the sauce. Season with salt and pepper.
7. Serve the dishes garnished with fresh basil or parsley.
