Delicious and easy to make, these Welsh cakes are reminiscent of small pancakes but have a more cookie-like flavor. Enjoy them for breakfast, as a snack, or for dessert!
Preparation Time: 30 minutes
Serving Size: 15 pieces

Ingredients:

- 4 dl all-purpose flour
- 1 dl fine sugar
- 1 tsp baking powder
- 1 dl raisins
- 1 egg
- 50 g salted butter (or 100 g butter)
- 50 g lard
- 1 tbsp milk
- A pinch of salt
- Butter for frying
- Sugar for sprinkling on top

Instructions:

1. In a bowl, mix all the dry ingredients (flour, sugar, baking powder) together.
2. Rub the butter and lard into the dry mixture until it becomes crumbly.
3. Add the egg and a splash of milk, and mix to form a dough.
4. Dust a work surface with flour and roll out the dough to about 1.5 cm thick.
5. Use a glass to cut out round cakes from the dough.
6. Fry the cakes in butter over medium heat until they are lightly browned but still pale.
7. Sprinkle sugar over the warm cakes and enjoy while still warm.
The cakes can be stored in a tin for about a week.
