A delightful traditional treat, Welsh cakes are perfect for enjoying with tea or milk. This summer version features dried strawberries, making them delicious both warm and cold.

Serving Size: About 12 cakes
Ingredients:
- 400 g all-purpose flour
- 100 g fine sugar
- 1 tsp baking powder
- 50 g dried strawberries
- 1 egg
- 50 g salted butter
- 50 g lard (available in tubes)
- 1/4 tsp salt
- (1 tbsp milk, if needed)
- Butter for frying
Instructions:
1. In a large bowl, mix all the dry ingredients (flour, sugar, baking powder, salt, and dried strawberries) together.
2. Add the butter and lard, and rub them into the dry mixture until it resembles a crumbly texture.
3. Beat the egg and add it to the mixture. If the dough feels too crumbly, add a splash of milk.
4. Lightly flour a work surface and roll out the dough to about 1.5 cm thick.
5. Use a glass to cut out round shapes from the dough.
6. Fry the cakes in butter on both sides until they turn a lovely golden brown. A cast iron skillet yields the best results, but a regular frying pan will work just fine.
7. Serve warm or let them cool and enjoy later.
