Ingredients:
- 200 g butter
- 3 dl all-purpose flour
- 1 dl grated Emmental cheese
- 1 dl cold water
- 4-5 ripe tomatoes
- 2 dl cream
- 3 eggs
- 2 tbsp Dijon mustard
- Salt and pepper to taste
- Fresh herbs (e.g., basil or thyme)
Instructions:
1. In a bowl, mix the butter and flour until crumbly.
2. Add the grated Emmental cheese and cold water, and mix until the dough is smooth.
3. Shape the dough into a ball, wrap it in cling film, and refrigerate for about 30 minutes.
4. Preheat the oven to 200°C (392°F).
5. Roll out the dough on a floured surface and line a tart pan with it.
6. Slice the tomatoes and arrange them on top of the dough.
7. In a bowl, whisk together the cream, eggs, Dijon mustard, salt, and pepper. Pour the mixture over the tomatoes.
8. Sprinkle fresh herbs on top.
9. Bake the tart in the oven for about 30-35 minutes, until the top is beautifully golden brown.
10. Allow to cool slightly before serving.
