This delicious lamb curry is a perfect blend of spices and tender meat that melts in your mouth. Preparation Time: 1 hour

Ingredients:
- 500 g lamb (cubed)
- 2 tablespoons oil
- 1 large onion (chopped)
- 2 garlic cloves (minced)
- 1 fresh chili (minced)
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon coriander powder
- 400 g crushed tomatoes
- 400 ml coconut milk
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Heat the oil in a large skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
2. Add the minced garlic and chili, and cook for another minute.
3. Add the lamb pieces and cook until the meat is nicely browned.
4. Sprinkle in the curry powder, cumin, and coriander powder. Mix well and cook for about 2 more minutes.
5. Pour in the crushed tomatoes and coconut milk. Stir and bring to a boil.
6. Reduce the heat, cover, and let the curry simmer for about 30 minutes, until the meat is tender. Stir occasionally.
7. Season with salt and pepper to taste.
8. Serve the curry garnished with fresh coriander alongside rice or naan bread.
