Ingredients:

- 4 fresh perch
- 2 tbsp salt
- 1 tbsp sugar
- 1 tsp black pepper
- 1 lemon (juice and zest)
- Fresh herbs (such as dill or parsley)
- Smoking chips (like alder or applewood)

Instructions:

1. Fillet the perch and remove the bones. Rinse the fillets under cold water and pat them dry with paper towels.
2. Prepare the marinade by mixing salt, sugar, black pepper, lemon juice, and grated lemon zest.
3. Rub the marinade onto the perch fillets and let them marinate in the refrigerator for at least 30 minutes.
4. Preheat the smoker and add the smoking chips. Once the smoke begins to rise, place the perch fillets in the smoker.
5. Smoke the perch fillets for about 1-1.5 hours or until they are cooked through.
6. Serve the smoked perch with fresh herbs and side dishes.
