Goat Cheese and Mozzarella Salad

A refreshing salad featuring cherry tomatoes, cucumbers, and creamy goat cheese, drizzled with pesto and balsamic vinegar. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 15 cherry tomatoes
- 1/2 cucumber
- 1/2 head of romaine lettuce
- 2 dl mild pesto (preferably homemade)
- 2 tsp balsamic vinegar
- 150 g goat cheese
- 150 g mozzarella cheese
- Salt and pepper to taste
Instructions:
1. Rinse and halve the cherry tomatoes.
2. Peel and slice the cucumber.
3. Tear the romaine lettuce into bite-sized pieces.
4. In a bowl, combine the cherry tomatoes, cucumber, and romaine lettuce.
5. Add the pesto to the salad and mix well.
6. Crumble the goat cheese and slice the mozzarella to place on top of the salad.
7. Drizzle balsamic vinegar over the salad and season with salt and pepper.
8. Serve immediately and enjoy!
