A delicious and hearty roasted goat cheese salad, perfect as a light dinner or appetizer after the festive season.

Ingredients:

- 200 g goat cheese
- 200 g salad mix (e.g., arugula, spinach, lettuce)
- 100 g cherry tomatoes
- 50 g nuts (e.g., walnuts or pine nuts)
- 1 tbsp honey
- 3 tbsp balsamic vinegar
- 4 tbsp olive oil
- Salt and pepper to taste

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Slice the goat cheese and place it on a baking sheet lined with parchment paper.
3. Roast the goat cheese in the oven for about 10-15 minutes until golden brown and slightly melted.
4. While the cheese is roasting, wash and dry the salad mix, then place it in a large bowl.
5. Halve the cherry tomatoes and add them to the salad.
6. Toast the nuts in a dry pan for a few minutes until golden brown, then add them to the salad.
7. In a small bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper to make the dressing.
8. Drizzle the dressing over the salad and toss well.
9. Top the salad with the roasted goat cheese and serve immediately.
