Delicious Vegetable Pasta

A simple and tasty vegetable pasta that comes together quickly, perfect for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g. spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and save some of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 2-3 minutes.
3. Add bell pepper and zucchini, cook for 5-7 minutes until the vegetables are tender.
4. Stir in cherry tomatoes and spinach, sauté for a few more minutes until the spinach wilts.
5. Mix the cooked pasta into the vegetable mixture. Add a little cooking water if needed to keep it moist. Season with salt and pepper.
6. Serve with grated Parmesan cheese and fresh basil on top.
