A delicious and surprising dish that utilizes the dandelions that spring rains bring. This pasta is a fantastic way to enjoy summer's wild greens in a delightful manner.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or penne)
- 2 dl fresh dandelion leaves
- 2 garlic cloves
- 1 dl cream
- 50 g Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Lemon juice (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some pasta water.
2. Chop the garlic and heat the olive oil in a pan over medium heat. Add the garlic and sauté for about 1 minute.
3. Add the dandelion leaves to the pan and cook until they are soft.
4. Pour the cream into the pan and mix well. Allow the mixture to simmer for at least 3-5 minutes.
5. Add the cooked pasta to the pan and stir. If necessary, add reserved pasta water to keep the pasta moist.
6. Grate the Parmesan cheese into the pasta and mix well. Season with salt, pepper, and lemon juice to taste.
7. Serve immediately and enjoy your dandelion pasta!
